Welsh Rarebit

Ingredients

Directions

The book gives no oven temperature. The 400°F in the steps was added when the recipe was transcribed, as a starting point.

Make the cheese sauce

  1. In a clean saucepan, combine the cheese, butter, and porter (or ale or milk).

  2. Stir over medium heat until melted and creamy.

  3. Season with black pepper and mustard to taste.

Assemble and serve

  1. Pour the mixture over hot buttered toast in a fireproof dish.

  2. Brown the surface in a hot oven (400 °F/200 °C) if desired.

  3. Serve immediately to avoid overcooking.

What each ingredient does

Cheese
Melts into the sauce to give it its rich, creamy body and savoury flavour.
Butter
Adds fat that keeps the melted cheese smooth and glossy rather than grainy.
Porter
Adds liquid to loosen the melted cheese and a malty, aromatic depth of flavour.
Dry english mustard
Adds a sharp, pungent note that balances the richness of the cheese.

The step that matters

Stir over medium heat until melted and creamy. Cheese proteins toughen and separate into greasy, grainy clumps when overheated, so gentle medium heat and constant stirring keep the sauce smooth.

Swap the mustard
