What each ingredient does

Cranberries
Provide the tart fruit base and flavor that the jelly is built from.
Sugar
Sweetens the tart fruit and helps the mixture thicken and set as it cooks.

The step that matters

Cooking after adding the sugar. The jelly sets as the sugar and fruit concentrate to a gel point. Cooking too briefly leaves it runny, while cooking too long can make it stiff and dull in flavor.
