Why it works: Sugar and vanilla are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 35,032 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Nut Caramel Frosting
Ingredients
Directions
Make the frosting
Boil brown sugar and water as for white mountain cream.
Gradually pour the hot mixture onto the beaten egg whites while beating constantly.
Continue beating until the mixture is nearly cooked.
Set the pan in a larger pan of boiling water and cook, stirring constantly, until the mixture becomes granular around the edges.
Remove from the hot water and beat with a spoon until the mixture holds its shape.
Finish and spread
Fold in the nuts and vanilla, then pour over the cake and spread with the back of a spoon, leaving a rough surface.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Brown sugar
- Provides sweetness and a caramel flavour, and dissolves into the syrup that sets the frosting.
- Whites of 4 eggs
- Whipped to a foam that gives the frosting its light, airy structure.
- English walnut meats
- Add crunch and a nutty flavour that contrasts with the soft frosting.
The step that matters
Cooking over boiling water until granular. Heating the sugar mixture over boiling water thickens it gradually. Stop too early and the frosting stays runny; go too far and it turns grainy and stiff. Stirring keeps the heat even so it sets smoothly.
Swap the walnut
How well each one fits the dish's main ingredients (sugar, vanilla, egg, meat):
- Almondfits better
- Chestnutfits better
- Pecansfits about as well
- Walnutthe original
Fit is the average pairing score against sugar, vanilla, egg, meat. Candidates are from the same food group and used in at least 100 recipes.
