Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Macaroni
Provides the bulk and chewy body that holds the cutlet together.
Cheese
Adds richness and flavour, and helps the mixture bind when cooled.
Butter
Fat that starts the roux and carries flavour into the sauce.
Flour
Thickens the butter and milk into a sauce that sets the mixture.
Milk
Forms the liquid base of the sauce, giving creaminess and moisture.
Egg
Binds the breaded coating so the crumbs stick and brown evenly.

The step that matters

Let the sauce cool before shaping. A warm, loose sauce will not hold its shape. Cooling lets the starch set, so the cutlets keep their form when breaded and fried.
