Why it works: Celery and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,810 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Beef Soup

Ingredients

Directions

Prepare the broth

  1. Wash the beef in cold water and place it in a soup kettle with enough cold water to cover it.

  2. Skim the surface as it heats until no more scum rises.

Simmer

  1. Cover the kettle and cook over low heat for five hours, replenishing with boiling water if it boils down too low.

  2. After three hours, add the diced celery root, chopped parsley, chopped leeks, and washed rice.

Finish and serve

  1. After five hours, remove the meat and bones, skim the fat, and season with salt and pepper.

  2. Stir in the grated nutmeg, pour the soup into a tureen, and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef leg
Releases flavor and gelatin into the broth as it simmers slowly over low heat.
Celery root
Adds a mild, earthy flavor and soft texture to the soup.
Leeks
Contribute a mild onion-like sweetness and aroma to the broth.
Rice
Thickens the soup slightly as its starch releases during cooking.

The step that matters

Skimming the surface as it heats. Scum made of coagulated proteins and impurities rises as the water heats. Removing it early keeps the broth clear and clean-tasting.

Swap the leek
