Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of old mutton
Provides the meat and rich flavor that give the soup its body.
Barley
Releases starch as it cooks, thickening the broth and adding texture.
Leek
Adds a mild onion-like sweetness and aroma to the broth.
Celery
Contributes a fresh, savory aroma that rounds out the broth.

The step that matters

Skimming the foam after boiling. Foam rising during the first boil carries impurities and coagulated proteins. Removing it keeps the broth clear and clean-tasting instead of cloudy or greasy.

Swap the parsley

How well each one fits the dish's main ingredients (mutton, barley, celery, leek, pepper):

  1. Thymefits about as well
  2. Parsleythe original
  3. Marjoramfits less well
  4. Turmericfits less well
