What each ingredient does

Mackerel
Provides the main body of the dish, with rich oily flesh that stays moist when broiled.
Fat pork or lard
Greases the gridiron so the fish does not stick and the surface can brown.

The step that matters

Turning the mackerel at 15 minutes. Broiling heats the fish from one side, so turning it partway through helps both sides cook evenly and keeps the flesh from drying or burning on the exposed face.

Swap the parsley

How well each one fits the dish's main ingredients (pepper, pork, sauce):

  1. Sagefits about as well
  2. Marjoramfits about as well
  3. Thymefits about as well
  4. Parsleythe original

Fit is the average pairing score against pepper, pork, sauce. Candidates are from the same food group and used in at least 100 recipes.
