Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, and carries the flavour of the onions.
Flour
Thickens the sauce as it cooks with the butter and tomatoes.
Canned tomatoes
Form the sauce base and provide acidity and moisture.
Cider vinegar
Adds sharp acidity that brightens the tomato flavour.

The step that matters

Cooking the flour before adding the tomatoes. Flour must cook for a few minutes in the melted butter so its raw starch taste fades and it thickens evenly. Adding the liquid too early can cause lumps.

Swap the tomato

How well each one fits the dish's main ingredients (butter, onion, flour, cider, vinegar, allspice, clove):

  1. Mustardfits better
  2. Shallotfits better
  3. Horseradishfits better
  4. Tomatothe original

Fit is the average pairing score against butter, onion, flour, cider, vinegar, allspice, clove. Candidates are from the same food group and used in at least 100 recipes.
