Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the bulk of the filling and provides the main savory flavor.
Corn starch
Thickens the broth into a sauce that binds the chicken and holds the croquettes together.
Chicken broth
Adds moisture and flavor to the filling, and forms the sauce with the starch.
Egg
Creates a coating that helps the crumbs adhere and promotes browning when fried.
Rusk
Forms a crisp, browned outer crust around the croquettes.

The step that matters

Let the shaped croquettes sit and chill before coating. Cooling firms the starch-thickened filling so the croquettes keep their shape. If they are coated or fried while soft, they can crack or fall apart in the pan.

Swap the celery

How well each one fits the dish's main ingredients (chicken, pepper, parsley, butter, corn, egg):

  1. Tarragonfits better
  2. Thymefits better
  3. Marjoramfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, pepper, parsley, butter, corn, egg. Candidates are from the same food group and used in at least 100 recipes.
