Puff Paste

Ingredients

Directions

  1. Mix baking powder with flour and rub in half of the unsalted butter until combined.

  2. Form a stiff dough and roll it out into a long rectangle.

  3. Spread one third of the remaining butter on the dough and chill for 15 minutes.

  4. Fold the dough into thirds, then roll out again and repeat the butter spreading and folding process until all butter is incorporated.

  5. Divide the dough into portions and roll out quickly, avoiding handling after the first butter application.
