Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 400°F (200°C).

  2. Mix the flour and baking powder in a bowl.

  3. Beat the egg whites until stiff in a separate bowl.

  4. Cream the butter and sugar together until light in another bowl.

  5. Beat in the egg yolks.

  6. Add the grated nutmeg and ground almonds.

  7. Mix in half of the flour mixture.

  8. Add half of the beaten egg whites.

  9. Add the remaining flour mixture.

  10. Add the remaining beaten egg whites.

Bake

  1. Quickly pour the batter into a well-buttered cake pan.

  2. Bake for 45 to 50 minutes.

  3. Test with a wooden skewer for doneness.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites beaten to stiff peaks trap air, lifting the cake and giving it a light crumb.
Butter
Creamed with sugar, it traps air and adds richness and tenderness to the crumb.
Sugar
Creamed with butter, it helps create a light texture and adds sweetness and browning.
Flour
Provides the main structure that holds the cake together as it sets in the oven.
Baking powder
Releases gas in the batter, helping the cake rise and become airy.
Ground almonds
Add moisture, richness and a nutty flavor, giving a tender, dense crumb.

The step that matters

Folding in the beaten egg whites. Egg whites hold the air that lifts the cake. Mixing them in too vigorously knocks out air and makes a denser cake, so fold gently and bake quickly once the batter is in the pan, before the air escapes.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, butter, sugar, egg, almond, milk):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Capersfits less well
  4. Turmericfits less well

Fit is the average pairing score against flour, butter, sugar, egg, almond, milk. Candidates are from the same food group and used in at least 100 recipes.
