Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and thicken the drink, while whipped whites lighten its texture.
Sugar
Sweetens the drink and helps the yolks beat to a creamy, smooth base.
Milk
Forms the liquid base that gives the eggnog its body and volume.
Brandy or whisky
Adds alcohol flavour and aroma and helps keep the drink stable.

The step that matters

Folding in the beaten egg whites. Whites hold air only when beaten stiff; overmixing or stirring them in vigorously deflates the foam, leaving the eggnog flat and dense.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, brandy, milk):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Clovefits less well

Fit is the average pairing score against egg, sugar, brandy, milk. Candidates are from the same food group and used in at least 100 recipes.
