Roman Punch

Ingredients

Directions

Prepare the lemons

  1. Wash and wipe the lemons. Peel off the yellow skin thinly and place it in a punch bowl.

  2. Remove the white skin, which is bitter, and discard it.

  3. Cut the lemons in half and squeeze the juice into the bowl. Remove the seeds and add the squeezed lemon halves to the bowl.

  4. Add the sugar and rub it into the lemons for a few minutes.

Make the punch

  1. Pour in the boiling water and let it cool.

  2. Strain the mixture through a fine sieve into the punch bowl.

  3. Add the rum and slice two lemons into the punch bowl.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the juice and aromatic peel that flavour the punch with acidity and fragrance.
White granulated sugar
Sweetens the punch and balances the sharp acidity of the lemon juice.
Jamaica rum
Adds alcohol and strong aroma, giving the punch its character.

The step that matters

Rubbing the sugar into the lemon peel. Rubbing sugar into the peel draws aromatic oils out of the zest into the sugar, so the punch gets more lemon fragrance. Skipping or rushing this step leaves the flavour flatter.
