What each ingredient does

Rice
Releases starch into the water, giving the liquid body and a mild, grainy flavor.

The step that matters

Keep it at a slow boil and stir occasionally. A slow boil with occasional stirring keeps the rice from settling and scorching on the bottom of the pan while starch slowly leaches into the water over the full hour.
