What each ingredient does

Baking soda
Neutralizes the acids that make rancid butter taste sour, reducing the off flavor.
Butter
Serves as the fat being restored; the main ingredient whose flavor is being improved.

The step that matters

Rinsing the butter after the soda water. Rinsing removes the dissolved soda and any remaining soap-like residue from the butter. Leftover alkali could leave a soapy or bitter taste, so thorough rinsing matters before salting.
