What each ingredient does

Almonds
Provide the nut itself; blanching loosens the skin so it slips off without changing the flesh.

The step that matters

Rub the almonds between your hands to remove the dark skin.. The skin slips off most easily when the almonds are still warm from the blanching water and have been moved promptly into cold water. Letting them cool fully before rubbing makes the skin cling and tear, leaving the nuts harder to peel cleanly.
