Roast Goose

Ingredients

Directions

  1. Clean and truss the goose. If it's old, boil it for 30 minutes wrapped in a cloth.

  2. Stuff the goose with bread crumbs mixed with butter, pepper, salt, grated onion, and sage.

  3. Dot the goose with drippings or lard and baste often while baking.

  4. For an alternative stuffing, use mashed potatoes with grated onions and sweet marjoram.

  5. Serve with stewed apples.
