Why it works: Summer savory and turnip share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 42 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

What each ingredient does

Mutton
Provides the main protein and rich meaty flavour that the stew is built on.
Flour
Dredged onto the mutton to brown and thicken the liquid into a gravy.
Butter
Fats used for frying the mutton and turnips, adding richness and browning.
Turnips
Firm root vegetable that holds its shape during long simmering and adds mild sweetness.
Potatoes
Starchy vegetable that softens in the broth and adds body to the stew.

The step that matters

Browning the mutton and flour. Frying the meat and dredging it with flour until brown develops deep savoury flavour through browning reactions and helps thicken the stew. Pale meat gives a flatter, less rich result.
