What each ingredient does

Strawberry acid
Provides the main strawberry flavour and liquid that forms the jelly.
Gelatin
Sets the liquid into a firm, sliceable jelly as it cools.

The step that matters

Dissolving the gelatin fully before mixing. Gelatin must be completely dissolved and evenly distributed in warm liquid; undissolved granules or lumps leave weak spots and uneven setting. Gentle warming keeps the gelatin dissolved without boiling away its setting power.
