Green Melon in Jelly

Ingredients

Directions

Make the green melon

  1. Wet the small melon mould and fill it with the cream blanc-mange colored green with spinach juice.

Set and assemble

  1. Wet the large melon mould and pour in the clear calf's-foot jelly, leaving room for the green melon to stand on top.

  2. Once both are perfectly set, take the green melon from the mould and place it top down in the center of the jelly.

  3. Pour the remaining soft jelly around the green melon and place the mould on ice.

What each ingredient does

Cream blanc-mange
Forms the creamy, soft-set centre that is shaped into the green melon.
Calf's-foot jelly
Sets clear around the green melon, giving the dish its firm, glossy outer body.

The step that matters

Unmoulding the green melon. The green melon must be fully set before it is turned out, or it will sag or lose its shape. Gelatin-based jelly firms as it cools, so the centre needs to be firm enough to hold its form when placed into the larger jelly.

Swap the melon

How well each one fits the dish's main ingredients (cream, spinach):

  1. Avocadofits better
  2. Coconutfits better
  3. Limefits better
  4. Melonthe original

Fit is the average pairing score against cream, spinach. Candidates are from the same food group and used in at least 100 recipes.
