What each ingredient does

Tomatoes
Form the bulk of the preserve and soften as they cook in the syrup.
Light brown sugar
Sweetens the preserve and thickens the syrup that coats the tomatoes.
Lemon
Adds acidity and fragrance from the rind and juice.

The step that matters

Cook the tomatoes slowly. A gentle simmer lets the tomatoes soften and absorb the syrup while holding their shape. A hard boil breaks them down and can scorch the sugar on the bottom of the pan.

Swap the tomato

How well each one fits the dish's main ingredients (lemon, sugar, clove, vinegar):

  1. Shallotfits better
  2. Mustardfits better
  3. Capsicumfits better
  4. Tomatothe original

Fit is the average pairing score against lemon, sugar, clove, vinegar. Candidates are from the same food group and used in at least 100 recipes.
