Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Directions

Prepare the sponge

  1. Cook potatoes until soft and mash to make 1 cup.

  2. Use the potato cooking water and add enough lukewarm water to make 3 pints.

  3. Stir in salt, sugar, and yeast, then thicken with flour.

  4. Let the sponge rise overnight in a warm place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Add starch and moisture, giving the bread a soft, tender crumb.
Yeast
Produces gas during fermentation, making the dough rise and become airy.
Flour
Forms the gluten network that gives the dough structure and chew.
Sugar
Feeds the yeast and adds a little sweetness and browning in the crust.

The step that matters

Letting the sponge rise overnight. The sponge needs enough time in a warm place for the yeast to ferment and build flavour and gas before the rest of the flour is added. Too cool or too short a rise leaves the dough dense.

Swap the potato

How well each one fits the dish's main ingredients (sugar, flour):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
