Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh mushrooms
Provide the main body and savory flavor of the ketchup as their juice is extracted and reduced.
Coarse sea salt
Draws moisture out of the mushrooms, creating the juice that becomes the base of the ketchup.
Vinegar
Adds acidity and brightness, thinning the thickened ketchup and helping it keep.

The step that matters

Boil slowly until thick. Slow boiling reduces the mushroom juice gradually, concentrating its flavor and body. Boiling too hard can scorch the bottom of the kettle and darken or burn the flavor.

Swap the allspice

How well each one fits the dish's main ingredients (mushroom, pepper, clove, vinegar):

  1. Allspicethe original
  2. Thymefits about as well
  3. Marjoramfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against mushroom, pepper, clove, vinegar. Candidates are from the same food group and used in at least 100 recipes.
