Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the fat and stock into a smooth gravy as it cooks.
Fat from the roasting pan
Carries the flour's flavour and helps it brown and form a roux.
Giblet stock
Provides the liquid and savory meaty flavour for the gravy.

The step that matters

Gradually pour in the stock while stirring constantly. Adding liquid slowly while stirring lets the flour disperse evenly in the fat, preventing lumps. Pouring it all at once tends to clump the starch and leave a grainy, uneven gravy.
