Pimento Timbales

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Butter individual tin moulds lightly.

  2. Line the moulds with canned pimentoes.

  3. Fill the moulds with chicken forcemeat.

  4. Place the moulds in a pan of hot water.

  5. Cover with buttered paper and bake at 400°F (200°C) until firm.

  6. Remove from moulds, garnish with a small sprig of parsley, and serve with Brown Mushroom Sauce.
