Why it works: Cucumber and lettuce match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 1,409 recipes mention both. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

What each ingredient does

Cucumbers
Form the crisp, cool, hollow baskets that hold the filling.

The step that matters

Scooping out the pulp. Cucumber walls are thin and can tear easily. Scooping gently keeps the baskets intact so they can hold the filling without breaking.

Flavor stand-ins for the lettuce

How well each one fits the dish's main ingredients (cucumber, sauce):

  1. Horseradishabout as good a flavor fit
  2. Lettucethe original
  3. Mustardabout as good a flavor fit
  4. Cauliflowerabout as good a flavor fit

Fit is the average pairing score against cucumber, sauce. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
