Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Roll the Parker House dough to ½ inch thick.

  2. Spread with melted butter, cinnamon, and currants.

  3. Roll up like a jelly roll and cut into 1-inch thick slices.

  4. Place slices on a greased pan, 1 inch apart.

Rise and bake

  1. Sprinkle tops with powdered sugar.

  2. Let rise until doubled in size.

  3. Bake in a 400°F (200°C) oven for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Parker house dough
Provides the soft, yeasted structure that rises and holds the spiral filling.
Melted butter
Adds fat and moisture to the filling, helping the rolls stay tender and brown.
Cinnamon
Contributes the warm, aromatic flavour of the filling.
Currants
Add small pockets of sweetness and chewy texture within the spiral.

The step that matters

Let rise until doubled in size. The dough must rise fully before baking, because yeast gas expansion gives the rolls their light, open crumb. Underproofed rolls stay dense and may split oddly in the oven.

Swap the currant

How well each one fits the dish's main ingredients (butter, cinnamon, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Currantthe original

Fit is the average pairing score against butter, cinnamon, sugar. Candidates are from the same food group and used in at least 100 recipes.
