Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat and bones
Release gelatin and savory flavor into the water during long, gentle simmering.
Onion
Adds sweetness and aromatic depth as it cooks slowly into the stock.
Carrot
Contributes natural sweetness and body to the flavor of the stock.
Celery root
Adds earthy, aromatic savoriness that rounds out the stock.

The step that matters

Simmer gently without boiling hard. A hard boil emulsifies fat into the liquid and makes the stock cloudy, while gentle simmering keeps it clear and lets collagen and flavor extract slowly.

Swap the onion

How well each one fits the dish's main ingredients (meat, pepper, clove, celery, parsley, carrot, turnip):

  1. Parsnipfits better
