Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Gives the broth its rich meaty flavour and body during the long simmer.
Barley
Thickens the broth as its starch swells and softens during cooking.
Carrot
Adds gentle sweetness and body as it softens in the broth.
Turnip
Adds mild sweetness and body as it softens in the broth.
Onion
Adds savoury depth and sweetness as it softens and browns in butter.

The step that matters

Cook slowly for 4 hours. Keeping the broth at a gentle simmer lets the meat become tender and the fat and connective tissue break down. A hard boil toughens the meat and clouds the broth.
