What each ingredient does

Spinach
Forms the body and green flavour of the soup once puréed into a pulp.
Butter
Adds richness and carries flavour as the base for the flour roux.
Flour
Thickens the milk into a smooth, body-rich soup as a roux.
Milk
Forms the liquid base of the soup, giving it a creamy, mild character.
Egg yolk
Enriches the soup and adds body when cooked gently with cream.

The step that matters

Adding the egg yolk diluted with cream. Egg yolk thickens by gentle heat. If the soup is boiling when it goes in, the yolk can scramble and turn grainy, so keep the heat moderate while it cooks.
