To Boil Fish

Ingredients

Directions

  1. Put the fish into a kettle of boiling water, enough to cover it.

  2. Add 1 teaspoon of salt and 1 tablespoon of vinegar or the juice of ½ lemon.

  3. Reduce the heat to let the water simmer gently after adding the fish.

  4. Add celery, onion, bay leaf, and peppercorns to improve flavor, if desired.

  5. Cook for 15 minutes per pound of fish.

  6. If not using a fish kettle, place the fish on a plate, tie it in a cloth, and then put it in the kettle.

What each ingredient does

Fish
Is the main food being cooked; gentle simmering keeps its flesh moist and tender.
Vinegar or lemon juice
Adds a light acidity that brightens the flavor of the fish.

The step that matters

Reduce the heat to a gentle simmer after adding the fish. Boiling vigorously toughens and breaks up delicate fish flesh, while a gentle simmer cooks it evenly and keeps it moist and intact.

Swap the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (fish, vinegar, onion):

  1. Garlicfits better
  2. Tarragonfits better
  3. Capersfits better
  4. Celerythe original

Fit is the average pairing score against fish, vinegar, onion. Candidates are from the same food group and used in at least 100 recipes.
