Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cook the oysters and prepare the sauce as for Creamed Oysters.

  2. Remove the sauce from the heat, add the oysters and the beaten egg yolks.

  3. Butter the shells or dishes and fill them about two-thirds full with the mixture.

  4. Cover the top with buttered bread crumbs.

  5. Bake in a hot oven at 400°F (200°C) for five minutes, or until the crumbs are brown.

  6. To make buttered crumbs, melt 1 tablespoon of butter, add 2 tablespoons of bread crumbs, and stir until combined.
