Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

To Roast Beef

Oven, in the book's wordsA very hot oven

Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the beef

  1. Preheat the oven to 400°F (200°C).

  2. Sear the beef in a hot pan on all sides using a fork.

  3. Place the beef on a rack in the pan.

  4. Sprinkle the beef with flour, salt, and pepper.

Roast

  1. Add 2 tablespoons of drippings to the pan if available, but do not add water.

  2. Cook the beef in the hot oven for 10 minutes.

  3. Reduce the heat.

  4. Baste often with the fat in the pan.

  5. Roast the beef for 10 minutes per pound for rare, or 15 minutes per pound for well done.

Rest and carve

  1. Let the beef rest on a platter with the fat side up.

  2. Carve the beef into thin slices across the grain.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Is the main cut being cooked, and its streaks of fat keep the meat moist as it roasts.
Flour
Sprinkled on the surface, it helps form a browned crust.
Drippings
Fat from the pan that bastes the meat, adding moisture and rich flavor to the surface.

The step that matters

Searing the beef on all sides. Browning the surface in a hot pan builds deep, savory flavor through the Maillard reaction. Turning it evenly prevents grey, unevenly cooked patches before the roast goes into the oven.
