Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spring chicken
Provides the main protein; broiling over gentle heat cooks it through while keeping the meat tender.
Soft butter
Adds fat and moisture to the skin, helping it brown and keeping the meat from drying out.
Coarse sea salt
Seasons the meat and skin and helps draw out surface moisture for better browning.

The step that matters

Turning the chicken to brown the skin side. Turn it only when nearly done. Browning the skin too early over direct heat can burn it before the meat cooks through, while turning too late leaves the skin pale.

Swap the lemon

How well each one fits the dish's main ingredients (chicken, butter, pepper, sauce, watercress):

  1. Lemonthe original
  2. Avocadofits about as well
  3. Limefits less well
  4. Coconutfits less well
