Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the sauce

  1. Melt the butter in a saucepan.

  2. Add flour, salt, and pepper; cook for 10 minutes, stirring until smooth.

Add the chicken

  1. Mix the sauce with the chicken and add the parsley, onion juice, and egg yolks.

  2. Stir over low heat for 5 minutes, then set aside to cool.

Fold and bake

  1. Beat the egg whites until stiff and gently fold them into the chicken mixture.

  2. Pour into a buttered pudding dish and bake at 400°F (200°C) for 20 minutes.

  3. Serve immediately in the same dish.

What each ingredient does

Butter
Adds richness and flavor to the base sauce.
Flour
Thickens the milk or stock into a smooth sauce that holds the chicken.
Chicken
Provides the main body and savory flavor of the souffle.
Eggs
Whites trap air for lift, while yolks enrich the mixture and help it set.
Milk or chicken stock
Forms the liquid base of the sauce and keeps the mixture moist.

The step that matters

Fold the beaten egg whites gently. Stiff whites hold air bubbles that make the souffle rise. Stirring vigorously deflates them, so the souffle bakes flat and dense.
