The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the eggplant

  1. Boil the eggplant until tender.

  2. Cut the eggplant in half and remove the insides, then mash them.

  3. Season the mashed eggplant with butter and salt.

  4. If desired, add grated cheese or finely chopped almonds.

Stuff and bake

  1. Spoon the mixture back into the eggplant shells.

  2. Top with buttered breadcrumbs.

  3. Bake in a 350°F (175°C) oven until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the body of the filling and the shells that hold it.
Butter
Adds richness and moisture to the mashed filling and helps the top brown.
Grated cheese or chopped almonds
Adds body and flavour to the filling and gives an optional crunch or richness.
Buttered breadcrumbs
Form a crisp, browned topping in the oven.

The step that matters

Bake until browned. Baking at 350°F (175°C) until browned sets the filling and develops color and flavor on the crumb topping. Underbaking leaves the filling loose and the top pale.
