Peppers Stuffed with Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Chop the pepper and onion very finely.

  2. Parboil the oysters, drain, and cut them into small pieces.

  3. Soak the bread crumbs in the oyster liquor, then press out the excess liquid.

Make the filling

  1. Sauté the pepper and onion in butter until light brown.

  2. Combine the sautéed mixture with the oysters and bread crumbs, and season with salt and pepper.

Bake and serve

  1. Stuff the mixture into the peppers and top with buttered cracker crumbs.

  2. Bake at 350°F (175°C) until the peppers are tender.

  3. Serve with tomato sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main savory filling and a briny, seafood flavor.
Bread crumbs
Absorb the oyster liquor and bind the filling so it holds together.
Butter
Adds richness and helps the pepper and onion brown lightly when sautéed.
Pepper
Forms the stuffed shell and turns tender as it bakes around the filling.

The step that matters

Pressing out the bread crumbs after soaking. Excess liquid left in the bread crumbs would make the filling wet and loose, so it may not hold its shape in the pepper or may steam rather than bake.

Swap the onion

How well each one fits the dish's main ingredients (pepper, oyster, bread, butter, tomato, sauce):

  1. Capsicumfits better
  2. Cucumberfits about as well
