Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Cut the tomatoes in half and remove the green stem.

  3. Place the tomatoes cut side up in an agate baking pan.

  4. Season each tomato half with a little coarse sea salt, a small piece of butter, and chives or onion.

  5. Bake for about 15 minutes, being careful not to break their shape.

  6. Serve each tomato half on round pieces of buttered toast.
