Moulded Chicken Salad

Ingredients

Directions

Make the stock

  1. Cook the chicken in warm water with seasonings and vegetables until tender.

  2. Reduce the stock to 2 cups.

  3. Strain the stock.

  4. Let the stock cool to remove the fat.

Prepare the mixture

  1. Soften the gelatin in ½ cup of cold water.

  2. Reheat the gelatin to dissolve it.

  3. Prepare the chicken and celery as for chicken salad, seasoning with salt and pepper.

  4. Beat in the whipped cream, chicken, and celery when the stock thickens.

Mould and serve

  1. Pour the mixture into a mould decorated with hard-boiled eggs, truffles, or olives.

  2. Use a bit of stock to hold the decorations in place.

  3. Mould in individual portions or one large mould.

  4. Remove the moulded salad onto a salad dish.

  5. Garnish with lettuce or celery leaves.

  6. Serve with mayonnaise dressing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body and meaty texture of the salad.
Gelatin
Sets the stock so the salad holds its moulded shape when chilled.
Whipped cream
Adds richness and a light, soft texture to the set mixture.
Stock (in the method)
Carries the gelatin and flavour, and sets the mould around the decorations.

The step that matters

Soften and dissolve the gelatin. Gelatin must be bloomed in cold liquid before gentle reheating, then fully dissolved. Undissolved granules leave gritty pockets, and boiling weakens its setting power.

Swap the lettuce

How well each one fits the dish's main ingredients (chicken, gelatin, cream, pepper, egg, truffle):

  1. Asparagusfits better
  2. Capsicumfits better
  3. Potatofits better
  4. Lettucethe original

Fit is the average pairing score against chicken, gelatin, cream, pepper, egg, truffle. Candidates are from the same food group and used in at least 100 recipes.
