Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Provides the bulk and crisp, crunchy texture of the slaw.
Vinegar
Supplies the sharp acidity that flavours the dressing and keeps the cabbage fresh-tasting.
Egg yolks
Thicken the dressing as they gently set when heated, giving it body.
Butter
Adds richness and a smooth, rounded texture to the dressing.
Sugar
Balances the sharpness of the vinegar with a touch of sweetness.

The step that matters

Cooking the egg yolk mixture over hot water. Egg yolks set as they heat, so cooking gently over hot water until it only thickens slightly keeps the dressing smooth. Too much heat can scramble the yolks and curdle the sauce.

Swap the cabbage

How well each one fits the dish's main ingredients (vinegar, sugar, mustard, pepper, butter, egg):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Shallotfits better
  4. Cabbagethe original

Fit is the average pairing score against vinegar, sugar, mustard, pepper, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
