What each ingredient does

Eggs
Set into a tender, delicate structure as the main component of the dish.
Butter
Adds richness and a smooth, savoury fat to the finished eggs.
Bread
Provides a crisp, absorbent base that holds the poached eggs.

The step that matters

Cook slowly on the side of the range. Gentle, sub-simmering heat sets the egg white evenly while keeping the yolk soft. Vigorous boiling tears the whites and makes the eggs ragged.
