Chestnut Puree with Cream

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Cut a cross on the shell of each chestnut with a sharp knife.

  3. Place the chestnuts in a pan with the butter and bake until the shells are broken open.

  4. Boil the chestnuts in hot water with a little salt until tender.

  5. Mash the chestnuts through a puree sieve.

  6. In a double boiler, combine the chestnut puree with sugar, flavoring, and a little cream.

  7. Stir over hot water until almost dry.

  8. Press the mixture through a colander or potato ricer onto a serving dish to form a mound.

  9. Surround the mound with sweetened and flavored whipped cream.
