What each ingredient does

Oranges
Provide the bitter peel that becomes the candied strips, with aroma from the rind.
Granulated sugar
Forms the thick syrup that candies the peel and coats the finished strips for sweetness.

The step that matters

Soaking the strips in cold water. Repeated water changes draw out the bitter compounds in the rind, so the peel tastes pleasant rather than harsh once candied.
