  3. Cook until it reaches the soft-ball stage when tested in cold water.

Cool and shape

  1. Remove from heat and let cool slightly.

  2. Stir until thick and creamy, then pour into a pan.

  3. Once cold, cut into squares.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and the crystal structure that makes the fudge set firm.
Cream
Adds fat and moisture, giving a smoother, softer texture.
Chocolate
Supplies the main chocolate flavour and cocoa solids that colour the fudge.
Butter
Adds richness and fat that keeps the fudge smooth and tender.

The step that matters

Cooking to the soft-ball stage. Sugar concentration rises as water boils off, so the final temperature sets the firmness. Stopping early gives a runny fudge, while overcooking makes it hard and grainy once cooled.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (sugar, cream, chocolate, butter):

  1. Almondfits better
  2. Filbertfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, cream, chocolate, butter. Candidates are from the same food group and used in at least 100 recipes.
