Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Baking soda
Reacts with the molasses acid to lighten the batter and help it rise.
Molasses
Adds sweetness, dark color, and moisture to the bread.
Rye flour
Adds flavor and a denser crumb with less gluten structure than wheat flour.
Whole wheat flour
Provides the main structure and a nutty flavor.
Indian meal
Adds coarse texture and a grainy body to the loaf.

The step that matters

Pour the mixture into a buttered mold.. The batter is loose and rises as the baking soda reacts, so the mold should be only partly filled and buttered well so the bread releases cleanly after steaming.
