Fried Oysters

Ingredients

Directions

Prepare

  1. Remove the gills from the oysters and place them on a thickly folded napkin to dry.

  2. Dip each oyster in wheat flour or finely rolled crackers until fully coated.

Fry and serve

  1. Heat the lard or beef fat in a thick-bottomed frying pan.

  2. Add the coarse sea salt to the hot fat.

  3. Place the oysters in the pan and cook over gentle heat until one side is a delicate brown, about 5 minutes.

  4. Turn the oysters by sliding a fork under them and cook for another 5 minutes.

  5. For added flavor, you can pour a little of the oyster liquid into the pan after frying, let it boil, and then serve with the oysters.

What each ingredient does

Oysters
Provide the main filling, cooking to a tender interior inside a crisp coating.
Wheat flour or finely rolled crackers
Form a dry coating that browns in the hot fat and gives a crisp outer crust.
Lard or beef fat
Conducts heat for frying and adds richness and browning to the coating.

The step that matters

Cooking over gentle heat. Gentle heat lets the coating brown evenly and the oysters heat through without the coating scorching before the oyster cooks. Too much heat burns the flour or crackers while the centre stays underdone.
