Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Clam Chowder

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the dish

  1. Butter a deep tin basin and sprinkle it thickly with breadcrumbs or soaked crackers.

  2. Sprinkle pepper over the crumbs and add bits of butter the size of a hickory nut.

  3. If desired, add finely chopped parsley.

Layer and bake

  1. Layer clams over the crumbs, season with pepper, and add more bits of butter.

  2. Add another layer of soaked crackers, followed by more clams and bits of butter.

  3. Sprinkle pepper over the top and add 1 cup of milk or water.

  4. Finish with a final layer of soaked crackers.

  5. Cover with a plate and bake in a hot oven (400°F / 200°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main seafood flavour and bulk of the dish.
Soda biscuits
Form the layers that soak up liquid and give the chowder body.
Butter
Adds richness and fat that carries flavour through the layers.
Milk or water
Supplies moisture that softens the crackers and steams the layers as they bake.

The step that matters

Covering and baking with the plate. Covering the basin traps steam so the crackers soften and the clams cook gently in moist heat. Uncovered, the top can dry out and brown before the layers are heated through.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (butter, biscuit, clam, pepper, milk):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Cinnamonfits less well
  4. Thymefits less well

Fit is the average pairing score against butter, biscuit, clam, pepper, milk. Candidates are from the same food group and used in at least 100 recipes.
