Stuffed Fillet of Veal with Bacon

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove the bone from the fillet and secure it with skewers and soft tape.

  2. Fill the cavity with a mixture of crumbs, chopped pork, thyme, parsley, pepper, coarse sea salt, nutmeg, and lemon peel.

  3. Cover the top with thin slices of bacon or salt pork, tying them in place with twine.

Cook and coat

  1. Place the fillet in a pot with 2 cups of boiling water and cook slowly for 2 hours.

  2. After cooking, transfer the fillet to a dripping pan and remove the strings and tape.

  3. Brush the meat with raw egg and coat it thickly with rolled crackers.

Bake and serve

  1. Bake in a 400°F (200°C) oven for 30 minutes, basting often with gravy from the pot.

  2. Once browned, serve on a hot dish with the pork around it.

  3. Strain and thicken the gravy to serve on the side.

What each ingredient does

Veal fillet
Forms the main body of the roast, becoming tender during slow cooking.
Chopped pork
Adds fat and moisture to the stuffing, keeping it juicy as it cooks.
Crumbs
Absorb juices in the stuffing, helping it hold together and stay moist.
Raw egg
Binds the cracker coating so it adheres and browns in the oven.
Rolled crackers
Form a crisp, browned crust on the outside during baking.
Bacon or salt pork
Lays fat over the top of the fillet, adding moisture and savory flavor as it renders.

The step that matters

Slow cooking in the pot. Cooking slowly in simmering liquid keeps the lean veal tender and moist. Cooking too hard can toughen the meat and dry out the stuffing before the final bake.
