Roast Turkey

Ingredients

Directions

  1. Remove the gills from the turkey and wipe it thoroughly with a cloth.

  2. Wash the inside well and dry it; wipe the outside nicely.

  3. Cut off the neck close to the back, leaving enough skin to turn over.

  4. Break the leg bones below the knee and draw out the strings from the thighs.

  5. Flatten the breast bone to make it look plump.

  6. Mix bread crumbs with butter, pepper, salt, and thyme; fill the breast with this mixture.

  7. Sew the neck skin over the back and truss the turkey firmly.

  8. Dredge the turkey lightly with flour and place a piece of butter in the basting ladle.

  9. Baste the turkey with melted butter until it is nicely browned.

  10. Serve with gravy and bread sauce, garnished with liver and gizzard under the wings.
