What each ingredient does

Eggs
Egg white sets with heat, forming the soft-centred poached egg that sits on the toast.
Toasted bread
Crisp, absorbent base that holds the poached egg and soaks up its runny yolk.

The step that matters

Cook until the egg white is firm. Egg white proteins set around 60 to 70 °C, so a firm white with a runny yolk depends on timing. Too little time leaves the white wispy, and too long overcooks the yolk.
